1/2 cup butter
4 ounces semisweet chocolate, chopped
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking powder
Pinch of salt
Directions
Preheat oven to 425°F. Grease a 6-cup muffin tin with butter or nonstick cooking spray. In a medium bowl, whisk together the flour, baking powder and salt; set aside. In a small saucepan over low heat, melt the butter and chocolate together until smooth; remove from heat and let cool slightly. In a large bowl using an electric mixer on medium speed, beat the eggs and sugar until light and fluffy . Add in the cooled chocolate mixture and mix until combined. Slowly add in the dry ingredients and mix until just combined; do not overmix. Stir in the vanilla extract. Divide batter evenly among prepared muffin cups; bake for 12-14 minutes or until tops are set but still.
