Ingredients
2 cups kumquats, sliced into thin rounds
1 cup white vinegar
1/2 cup sugar
1 teaspoon salt
2 cloves garlic, minced
1 teaspoon black peppercorns
2 bay leaves
Directions
In a medium saucepan, combine bay leaves, peppercorns, garlic, salt, sugar and vinegar. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 5 minutes. Add kumquats and simmer for an additional 5 minutes or until kumquats are tender but still slightly firm. Remove from heat and let cool completely before transferring to an airtight container or jar. Store in the refrigerator for up to 2 weeks.
