, Eggs, Mashed Potatoes Preheat a sous vide water bath to 145°F . Place eggs in a zip-top bag and seal. Submerge the bag in the preheated water bath and cook for 45 minutes. Meanwhile, place mashed potatoes in a separate zip-top bag and seal. Submerge the bag in the preheated water bath and cook for 15 minutes. Remove both bags from the water bath and let cool slightly before opening. Carefully peel eggs and slice into quarters or halves, depending on desired size of egg pieces. Divide mashed potatoes between two jars or containers with lids, then top with egg pieces. Serve warm or cold as desired!.
