Ingredients

3 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup butter, softened

2 cups white sugar

4 eggs

1 teaspoon vanilla extract

1 cup coconut milk

2 tablespoons coconut rum

1 cup shredded sweetened coconut flakes, divided

1/2 cup flaked coconut, divided

2 tablespoons vegetable oil

Directions

Adjust oven rack to lower-middle position and preheat to 350 degrees F . Lightly grease three 8-inch anodized aluminum cake pans and line with parchment . If you don’t have three pans, it’s okay to bake the cakes in stages; the batter will keep at room temperature until it's needed.
