Creamy Spinach Spaghetti Squash Casserole

Ingredients
1 large spaghetti squash
2 tablespoons olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
3 cloves garlic, minced
1/4 cup diced onion
1 package frozen chopped spinach, thawed and drained
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese

, cooked and shredded Preheat oven to 375 degrees F . In a large bowl, mix together mozzarella cheese, Parmesan cheese, ricotta cheese, spinach, onion, garlic, salt and pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Add the spaghetti squash and cook for 5 minutes or until lightly browned. Transfer the squash to a 9x13 inch baking dish. Spread the cheese mixture over the top of the squash. Bake in preheated oven for 25 minutes or until cheese is melted and bubbly. Serve warm.
