Ingredients
1 large cauliflower, cut into florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
2 large eggs, lightly beaten
¼ cup all-purpose flour
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves
Directions
Preheat oven to 375°F . Grease a 9-inch round cake pan with butter or nonstick cooking spray. In a large bowl, combine the parsley, Parmesan cheese, flour, eggs, salt, pepper, paprika, cumin and garlic. Mix until combined. Heat the olive oil in a large skillet over medium heat. Add the cauliflower florets and cook for 5 minutes or until lightly browned. Remove from heat and let cool slightly before adding to the egg mixture. Stir to combine. Pour the mixture into the prepared cake pan and spread evenly with a spatula or spoon. Bake for 25 minutes or until golden brown and set in the center when tested with a toothpick. Let cool completely before serving. Enjoy!.
