Ingredients
2 tablespoons olive oil
1 teaspoon cumin seeds
1 teaspoon coriander seeds
4 cloves garlic, peeled and chopped
2 teaspoons smoked paprika
2 teaspoons ground cumin
1 teaspoon ground caraway seeds
½ teaspoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon cayenne pepper
2 tablespoons tomato paste
1 tablespoon honey or agave nectar
3 tablespoons apple cider vinegar or white wine vinegar
½ cup dried chilies, such as ancho, guajillo, or New Mexico chilies
Directions
Set up a rimmed baking sheet with a wire rack. Put on disposable latex gloves before handling the dried chilies. Using kitchen shears and, working over the wire rack, cut off the stems from the chilies and cut them into strips. Shake the sheet tray to separate the seeds from the chilies and discard.
