Basic Roasted Cauliflower Rice

Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
Salt and pepper to taste
1/4 cup chopped fresh parsley
Directions
Preheat oven to 400 degrees F . Place cauliflower florets in a large bowl and drizzle with olive oil. Season with salt and pepper, to taste. Toss until evenly coated. Spread cauliflower onto a baking sheet lined with parchment paper or aluminum foil. Roast for 25 minutes, stirring halfway through cooking time, until golden brown and tender. Transfer roasted cauliflower to a food processor or blender and pulse until it resembles rice-like grains. Alternatively, you can grate the cauliflower using a box grater or use a knife to chop it into small pieces resembling rice grains. Transfer the “rice” to a bowl and stir in chopped parsley, if desired. Serve warm or at room temperature. Enjoy!.
