Directions
Preheat a grill to medium heat. Grill the merguez sausages for about 8 minutes per side until cooked through. Remove from the grill and set aside.
In a large skillet over medium heat add the olive oil and onions. Cook for 10 minutes stirring occasionally until the onions are caramelized and golden brown. Add in the garlic and cook for an additional minute until fragrant. Remove from heat and set aside.
In a small bowl mix together the mayonnaise and harissa until combined. Set aside.
Slice each roll in half lengthwise and lightly toast on the grill if desired.
