Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup buttermilk or sour cream
2 tablespoons instant espresso powder dissolved in 2 tablespoons hot water
2 cups coarsely chopped walnuts or pecans, toasted if desired
1 cup sweetened flaked coconut
Directions
Position a rack in the center of the oven and heat the oven to 350 degrees F. Coat the bottom and sides of a 9-inch round cake pan with a removable bottom with nonstick baking spray.
