Ingredients

2 medium zucchini, sliced into 1/4 inch thick rounds

2 tablespoons olive oil

Salt and pepper to taste

1 pint cherry tomatoes, halved

8 ounces fresh mozzarella cheese, cut into 1/2 inch cubes

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

Directions

Heat a grill pan or outdoor grill to medium-high. Brush both sides of zucchini slices with olive oil. Place on hot grill and cook, flipping once, 4-5 minutes, or until slightly softened and browned.
