Ingredients
1/2 pound pork loin, thinly sliced
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons sugar
1 tablespoon minced garlic
1 teaspoon freshly ground black pepper
8 ounces sweet potato starch noodles
3 tablespoons vegetable oil, divided
1 small onion, thinly sliced
2 carrots, julienned
4 ounces shiitake mushrooms, stemmed and sliced
3 scallions, cut into 1 inch pieces
Salt to taste
Directions
In a medium bowl, cover wood ear mushrooms generously with cold water and let stand until fully rehydrated and softened, about 1 hour. Drain, then tear wood ear mushrooms into smaller strips.
