Chicken Taquitos with Avocado Ranch Dipping Sauce

Ingredients
2 tablespoons olive oil
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
2 cups cooked, shredded chicken
8 flour tortillas
1 cup shredded cheese
Ingredients for Avocado Ranch Dipping Sauce:
1 ripe avocado, peeled and pitted
1/4 cup plain Greek yogurt or sour cream
2 tablespoons buttermilk or milk of choice
2 tablespoons chopped fresh cilantro leaves
1 tablespoon freshly squeezed lime juice
1/2 teaspoon garlic powder
Directions
To prepare the avocado ranch sauce, place all ingredients into the bowl of a food processor, and process until completely smooth and well combined; set aside in the fridge until ready to serve with the taquitos.
