Roasted Cauliflower Salad

Ingredients

1 head of cauliflower, cut into florets

2 tablespoons olive oil

Salt and pepper to taste

2 cloves garlic, minced

1/4 cup chopped fresh parsley

1/4 cup chopped fresh mint

1/4 cup crumbled feta cheese

1/4 cup sliced almonds

2 tablespoons lemon juice

2 tablespoons extra virgin olive oil

Directions

Place cauliflower florets on a rimmed metal baking pan. Drizzle with 3 tablespoons olive oil and sprinkle with salt and pepper; toss to coat.   Bake at 425 degrees for 15 minutes, stirring once. Allow to cool for about 15 minutes. Combine vinegar, 2 tablespoons olive oil, feta, walnuts, red onion, parsley, basil, and salt in a bowl.   Add roasted cauliflower and toss to coat. Chill at least 30 minutes to allow flavors to meld.
