Ingredients
1 lb boneless, skinless chicken thighs, cut into small cubes
2 tablespoons vegetable oil
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1 shallot, minced
3 kaffir lime leaves, thinly sliced
2 tablespoons fish sauce
2 tablespoons coconut sugar or brown sugar
1/4 cup freshly squeezed lime juice
1/4 cup chopped fresh cilantro leaves
For the Lawar:
3 cups finely shredded green cabbage
3 cups finely shredded long beans
3 cups grated coconut
Directions
Place all the ingredients for the sambal in a food processor and process until mixture forms a paste, about 30 seconds; set aside.
