Ingredients

6 eggs

2 tablespoons oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

2 green chillies, slit lengthwise

1 large onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger paste

1/2 teaspoon turmeric powder

1/2 teaspoon red chilli powder

2 medium tomatoes, chopped into small pieces

Salt to taste

2 tablespoons freshly chopped coriander leaves

Directions

Heat oil in a medium non-stick saucepan over medium-high heat until shimmering. Add onions. Cook, stirring, until softened but not browned, about 4 minutes. Add ginger-garlic paste and cook, stirring, until fragrant, about 1 minute. Add the tomato puree and stir until mixed through with the onions, about 1 minute.
