Ingredients

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 orange bell pepper, cut into 1-inch pieces

1 zucchini, cut into 1/2 inch slices

1 red onion, cut into 1/2 inch wedges

8 ounces mushrooms, halved or quartered if large

2 tablespoons olive oil

3 cloves garlic, minced

2 tablespoons freshly grated ginger

3 tablespoons soy sauce

2 tablespoons honey

2 teaspoons sesame oil

1 teaspoon chili flakes

For Skewers: 8 wooden skewers

Directions

Place the cilantro, garlic, fish sauce, water, pepper, chili-garlic sauce in the bowl of a food processor; pulse to form a paste. With the processor running, pour the oil through the lid spout in a slow stream. Use a spatula to scrape the marinade out of the processor and pour it over the vegetables.
