Ingredients
2 cups all-purpose flour
1/2 teaspoon salt
1 cup cold unsalted butter, cut into small pieces
1/4 cup ice water
2 tablespoons granulated sugar
2 large eggs, lightly beaten
3 cups kumquats, halved and seeded
1/2 cup light brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons freshly squeezed lemon juice
Directions
Place butter and confectioner's sugar in bowl of stand mixer fitted with a paddle attachment. Split and scrape vanilla bean and add scrapings to bowl, reserving pod for another use. Set mixer on medium-low speed and mix until butter is light and fluffy, about 2 minutes, scraping as necessary. With mixer running, add yolks one at a time, scraping bowl in between additions. Add cake flour and salt and mix on low until fully incorporated, about 15 seconds. Transfer to a lightly floured board, pat into a 4-inch circle, wrap in plastic and chill at least 30 minutes.
