Ingredients

1 pound fresh ramen noodles

2 tablespoons sesame oil

4 cloves garlic, minced

1 teaspoon grated ginger

3 tablespoons shio ramen seasoning

6 cups chicken or vegetable broth

2 tablespoons soy sauce

1 tablespoon mirin

2 teaspoons fish sauce

1/4 cup chopped scallions, for garnish

Soft boiled eggs, for garnish

Directions

Combine kombu and shiitake mushrooms with 1 quart water in a sealable container and refrigerate for at least 8 and up to 24 hours.
