Ingredients

1 cup Testaroli pasta

2 tablespoons olive oil

3 cloves garlic, minced

1/4 teaspoon red pepper flakes

1/4 cup pine nuts, toasted

2 cups fresh basil leaves, packed

1/4 cup Parmesan cheese, grated

Salt and freshly ground black pepper to taste

1/2 cup extra virgin olive oil

1/4 cup reserved cooking water from the Testaroli

Directions

Bring a large pot of salted water to a boil over high heat. Add the Testaroli pasta and cook until al dente, about 8 minutes. Reserve 1/4 cup of the cooking water before draining the pasta. In a food processor or blender, combine the reserved cooking water, extra virgin olive oil, salt and pepper, Parmesan cheese, basil leaves, pine nuts, red pepper flakes and garlic. Blend until smooth. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the cooked Testaroli pasta and sauté for 2 minutes. Pour in the pesto sauce and toss to coat evenly. Cook for an additional 2 minutes or until heated through. Serve immediately with grated Parmesan cheese on top if desired. Enjoy!.
