Ingredients
1/2 cup butter, melted
2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
4 ounces semi sweet chocolate, melted and cooled slightly
2 tablespoons heavy cream
2 tablespoons unsalted butter, softened
2 teaspoons instant espresso powder
4 large egg whites
For the Mousse:
8 ounces semi sweet chocolate, chopped finely
3 tablespoons light corn syrup
3 tablespoons water
2 teaspoons vanilla extract
Pinch of salt
For the Ganache: - 8 ounces semi sweet chocolate, chopped finely - 1 cup heavy cream
Directions
Adjust oven rack to middle position and preheat oven to 350 degrees F. Grease bottom and sides of 9-inch springform pan and dust with cocoa. Set pan on baking sheet.
