Ingredients
1/2 cup quinoa, rinsed and drained
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
3 tablespoons harissa paste
2 cloves garlic, minced
2 tablespoons freshly squeezed lemon juice
1 pound large shrimp, peeled and deveined
1 can chickpeas, drained and rinsed
3 green onions, thinly sliced
Fresh parsley leaves, for garnish
Directions
Generously season shrimp with salt and pepper. Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat until shimmering. Add the shrimp and cook until pink on one side, about 2 minutes, then flip and cook until just barely undercooked, 1 minute more. Remove and set aside, loosely covering to keep warm.
