Ingredients
1/2 cup unsalted butter, divided
1 small onion, finely chopped
2 cups Arborio rice
1/2 cup dry white wine
6 to 7 cups chicken or vegetable broth, heated
1/4 teaspoon saffron threads, crumbled
1/2 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper to taste
Directions
Combine rice and stock in a large bowl. Agitate rice with fingers or a whisk to release starch. Strain through a fine-mesh strainer set over a 2-quart liquid cup measure or large bowl. Allow to drain well, shaking rice of excess liquid.
