Chocolate All-Butter Crust for a single-crust pie, partially prebaked in a 9-inch springform pan

1 jalapeño pepper, halved and sliced into 1/2-inch pieces

1-inch piece fresh ginger, peeled and sliced into 1⁄8-inch pieces

1 cup whole milk

1 cup heavy cream

12 ounces bittersweet chocolate , broken into 1/4-inch pieces

1/2 teaspoon ground cardamom

1/2 teaspoon kosher salt

2 large eggs

2 teaspoons fresh lime juice

Crust Ingredients:

1 cup unbleached all-purpose flour

1/4 cup cocoa powder

1/2 teaspoon kosher salt

1 1/2 teaspoons granulated sugar

1/4 pound cold unsalted butter, cut into 1/2 inch pieces

1/2 cup cold water

2 tablespoons cider vinegar

1/2 cup ice


Position a rack in the center of the oven and preheat the oven to 325 degrees F.
