The Best Vegan Stuffing
Sage-scented mushrooms, pecans, and bread make a vegan stuffing that has familiar Thanksgiving flavors and texture.

Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 celery stalks, diced
- 8 ounces mushrooms, sliced
- 2 teaspoons dried thyme
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 5 cups cubed bread
- 1/2 cup vegetable broth or water
- 2 tablespoons vegan butter or margarine
Directions
Adjust oven racks to lower-middle and upper-middle positions. Preheat oven to 275 degrees F (135 degrees C). Spread bread evenly over 2 rimmed baking sheets. Stagger trays on oven racks and bake until completely dried, about 50 minutes total, rotating trays and stirring bread cubes several times during baking. Remove from oven and cool. Increase oven heat to 350 degrees F (177 degrees C).
