Campfire Chili in a Dutch Oven Recipe

Ingredients

2 pounds ground beef

1 large onion, diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper

Salt and freshly ground black pepper, to taste

2 cans kidney beans, drained and rinsed

2 cans diced tomatoes with green chilies, undrained

1 can tomato sauce

3 cups beef broth or stock

Directions

Rinse and drain soaked beans. Heat oil in Dutch oven over hot coals until smoking. Add half of pork and cook until well-browned on all sides, about 10 minutes. Transfer to a large bowl and repeat with remaining half of pork. Transfer second batch to bowl with the first batch.
