Ingredients
2 boneless, skinless chicken breasts
2 tablespoons vegetable oil
Salt and pepper to taste
1/4 cup sesame seeds
4 cups shredded cabbage or coleslaw mix
1 red bell pepper, thinly sliced
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro leaves
For the Sesame Ginger Vinaigrette:
3 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons honey or agave nectar
1 tablespoon freshly grated ginger root
2 cloves garlic, minced
Directions
Adjust oven rack to center position and preheat the oven to 350 degrees F. Place the chicken breasts on a foil lined sheet pan. Rub the skin with 1 tablespoon oil and sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked and juices run clear. Set aside until cool enough to handle.
