Cuban Black Beans and Rice Recipe

Ingredients
1 tablespoon olive oil
1/2 cup diced onion
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
2 cans black beans, drained and rinsed
1 cup vegetable broth or water
Salt and freshly ground black pepper, to taste
2 cups cooked white rice
Fresh cilantro leaves, for garnish
Directions
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, oregano, salt, and pepper and stir to combine. Add the vegetable broth or water and bring to a simmer. Add the black beans and cook for 10 minutes, stirring occasionally. Serve over cooked white rice with fresh cilantro leaves as garnish. Enjoy!.
