Ingredients
2 tablespoons butter
1/2 cup diced fennel bulb
1/4 cup diced onion
2 cloves garlic, minced
2 cups chicken broth
1/2 teaspoon dried thyme
1 bay leaf
2 dozen shucked oysters with their liquor
1/4 cup heavy cream or half and half
Salt and freshly ground black pepper to taste
Directions
In a large saucepan, melt butter over medium heat. Add shallots, fennel, celery, and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add thyme or bay leaf.
