Curried Chicken Salad with Grapes and Cashews Recipe

Ingredients
2 cups cooked chicken, diced
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
2 tablespoons curry powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup red grapes, halved
1/2 cup green grapes, halved
1/2 cup roasted cashews, chopped
Directions
In a large bowl, combine the cashews, green grapes, red grapes, black pepper, salt, garlic powder and curry powder. Stir until all ingredients are evenly distributed. In a separate bowl, mix together the Greek yogurt and mayonnaise until smooth. Add the chicken to the dry ingredients in the large bowl and stir until everything is evenly coated with the spices. Pour in the yogurt-mayonnaise mixture and stir until everything is evenly coated with it as well. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld together. Serve chilled or at room temperature with crackers or on top of a bed of lettuce or spinach leaves. Enjoy!.
