2 cups fresh rhubarb, cut into 1/2-inch pieces

2 tablespoons butter, melted

1/4 cup granulated sugar

3 large eggs

1/2 cup all-purpose flour

1/2 teaspoon baking powder

Pinch of salt

1/2 cup whole milk

2 tablespoons honey

2 teaspoons vanilla extract

Powdered sugar for dusting


Preheat oven to 375 degrees F . Grease a 9-inch round baking dish with butter. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate bowl, beat together the eggs and sugar until light and fluffy. Add the melted butter, milk, honey, and vanilla extract; mix until combined. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Spread the rhubarb pieces evenly in the prepared baking dish. Pour the batter over top of the rhubarb pieces and spread evenly with a spatula or spoon. Bake for 25 minutes or until golden brown on top and a toothpick inserted into center comes out clean. Let cool for 10 minutes before serving warm or at room temperature dusted with powdered sugar . Enjoy!.
