Ingredients

1/2 cup unsalted butter

1/2 teaspoon salt

1 cup all-purpose flour

4 large eggs

3/4 cup grated Gruyere cheese

3/4 cup grated Parmesan cheese

Directions

Preheat oven to 375 degrees F . Line two baking sheets with parchment paper. In a medium bowl, mix together the Parmesan and Gruyere cheeses. Set aside. In a medium saucepan, combine the butter, salt, and 1 cup of water over medium heat until the butter is melted and the mixture comes to a boil. Add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball that pulls away from the sides of the pan and leaves a thin film on the bottom of the pan . Remove from heat and let cool for 5 minutes before adding eggs one at a time, stirring vigorously after each addition until fully incorporated into dough. Stir in cheese until combined. Drop dough by tablespoonfuls onto prepared baking sheets about 2 inches apart . Bake for 25 minutes or until golden brown and puffed up . Serve warm or at room temperature. Enjoy!.
