Warm Farro Salad With Asparagus, Peas, and Feta Recipe

Ingredients

2 cups farro

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 bunches asparagus, trimmed and cut into 1-inch pieces

1 cup frozen peas, thawed

4 ounces feta cheese, crumbled

2 tablespoons fresh lemon juice

Directions

Heat 2 tablespoons olive oil in a Dutch oven or large saucepan until shimmering. Add 2 cups of asparagus and chili flakes, and cook until lightly browned, about 4 minutes. Season with salt and pepper and set aside.
