Chicken Egg Foo Yung and Garlic Bok Choy Recipe

Ingredients

2 boneless, skinless chicken breasts, cut into small cubes

4 eggs

1/4 cup all-purpose flour

2 tablespoons vegetable oil

1/2 teaspoon salt

1/4 teaspoon ground black pepper

2 cloves garlic, minced

1/2 cup chopped onion

1 cup shredded carrots

2 cups bean sprouts

2 cups sliced bok choy

3 tablespoons soy sauce

2 tablespoons sesame oil

Directions

Heat sesame oil in a large skillet over medium-high heat. Add soy sauce, bok choy, bean sprouts, carrots, onion, garlic, black pepper and salt. Cook for 5 minutes or until vegetables are tender. Remove from heat and set aside. In a separate bowl, whisk together the vegetable oil and flour until combined. In another bowl, beat the eggs until light and fluffy. Heat a large skillet over medium-high heat and add the chicken cubes. Cook for 3 minutes or until cooked through. Add the egg mixture to the pan and cook for 2 minutes or until lightly browned on both sides. Add the cooked vegetables to the pan with the chicken and egg mixture and stir to combine. Cook for an additional 2 minutes or until heated through. Serve hot with steamed rice if desired. Enjoy!.
