3 cups day old French bread, cut into 1 inch cubes
3 tablespoons olive oil, divided
1/2 cup julienned carrots
1/2 cup julienned cucumber
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped fresh mint leaves
3 tablespoons sesame seeds, toasted
Salt and freshly ground black pepper, to taste
Directions
Transfer tofu to a large zipper-lock freezer bag. In a small bowl, whisk together lemongrass, soy sauce, honey, and fish sauce. Pour marinade over tofu, press out all air from the bag, seal, and refrigerate for at least 30 minutes or overnight, turning once halfway through marinating time.
