Roast Turkey Soup Recipe

Ingredients
1 large onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried thyme
4 cups chicken broth or stock
2 cups cooked turkey meat, shredded or chopped
1/2 cup uncooked long grain white rice
Salt and pepper to taste
Directions
Combine stock, turkey parts, bay leaves, and thyme sprigs in a large stockpot. Bring to a boil over high heat, reduce to a bare simmer, and cook for 1 hour. Strain broth into a medium saucepan and discard solids.
