Ingredients
4 bell peppers, any color
1 lb ground beef or turkey
1/2 cup diced onion
1/2 cup diced celery
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked cauliflower rice
1/2 cup shredded cheese
2 tablespoons olive oil
Directions
Preheat oven to 375 degrees F. Heat olive oil in a large skillet over medium heat. Add garlic, celery, and onion and cook until softened, about 5 minutes. Add ground beef or turkey and cook until browned, about 8 minutes. Season with salt, pepper, and Italian seasoning. Stir in cooked cauliflower rice and remove from heat. Cut the tops off of the bell peppers and remove the seeds and membranes inside each pepper half. Place peppers in a baking dish or on a baking sheet lined with parchment paper or aluminum foil for easy cleanup later. Divide the beef mixture evenly among the four peppers, filling them up as much as possible without overflowing them . Sprinkle shredded cheese on top of each pepper if desired . Bake for 25-30 minutes until peppers are tender and filling is cooked through. Serve warm with your favorite sides! Enjoy!.
