Ingredients
1 lb beef liver, cut into 1/2 inch cubes
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons Sichuan peppercorns, crushed
1 teaspoon red pepper flakes
2 tablespoons fermented black beans, rinsed and chopped
1/4 cup Shaoxing wine or dry sherry
2 tablespoons soy sauce
1 tablespoon sugar
2 teaspoons cornstarch mixed with 2 tablespoons water
3 scallions, sliced
Directions
Cut liver and tofu into 1/2 inch cubes. In mixing bowl, toss liver with cornstarch until evenly coated.
