Ingredients
2 tablespoons olive oil
1 large onion, finely chopped
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon red pepper flakes
2 pounds squid, cleaned and cut into rings or tentacles
1 cup canned diced tomatoes with their juices
2 tablespoons harissa paste
1/2 cup pitted green olives, halved lengthwise
Salt and freshly ground black pepper to taste
Directions
In a large saucepan, heat olive oil over medium-high heat until shimmering. Add onion and garlic and cook, stirring, until softened but not browned, about 4 minutes.
