Ingredients
- 1 whole turkey
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 2 onions, quartered
- 2 carrots, cut into large chunks
- 2 celery stalks, cut into large chunks
- 4 cloves garlic, smashed
- 1/4 cup butter, melted
- 1/4 cup all purpose flour
- 3 cups chicken broth or stock
- 1/4 cup dry white wine
Directions
Set oven rack to lowest position and place a baking stone or baking steel on it. Preheat oven to 500 degrees F (260 degrees C). Allow to preheat for at least 45 minutes before adding turkey. Meanwhile, rinse turkey and carefully pat dry with paper towels. Season generously with salt and pepper. (If turkey has been dry-brined, omit rinsing and salting steps; see note.) Set turkey breast side up in a V-rack over a foil-lined rimmed baking sheet.
