Dan Dan Noodles with Bean Sprouts Recipe

Ingredients

8 ounces fresh Chinese egg noodles or dried spaghetti

2 tablespoons sesame oil

2 tablespoons peanut oil

4 cloves garlic, minced

1 teaspoon freshly grated ginger root

1/2 cup chicken broth or vegetable broth

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon chili paste with garlic

1/4 cup chopped green onions

1/2 pound ground pork or turkey

2 cups bean sprouts

Salt and pepper to taste

Directions

Heat oil or lard in a wok over medium heat until shimmering. Add the crushed chilies and Sichuan pepper and stirfry until oil is spicy and fragrant, about 10 seconds, taking care not to burn the spices. Add pickled vegetables and stir-fry 20 to 30 seconds longer. Add minced meat and soy sauce and cook meat until it's lightly browned and crisp, about 1 minute. Transfer mixture to small bowl and set aside.
