Ingredients

1 cup French green lentils

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

2 carrots, diced

1 celery stalk, diced

3 cups vegetable broth or water

1 bay leaf

Salt and freshly ground black pepper to taste

Directions

Put the lentils in a strainer and pick through them, discarding any bits of stone that might have escaped the packers; rinse under cold running water.
