2 cups Arborio rice
4 cups vegetable stock
1/2 teaspoon saffron threads
1/4 cup freshly grated Parmesan cheese
2 tablespoons butter
1/2 cup finely chopped onion
Salt and pepper to taste
2 eggs, lightly beaten
1/2 cup all purpose flour
2 cups panko breadcrumbs
8 ounces mozzarella cheese, cut into small cubes
Vegetable oil for frying
Directions
Preheat oven to 300 degrees F. Place bread cubes on a rack set in a rimmed baking sheet and bake in oven until completely dried out, about 30 minutes.
