Ingredients
2 pounds mussels, scrubbed and debearded
1 tablespoon vegetable oil
2 cloves garlic, minced
1 shallot, minced
1 teaspoon grated fresh ginger
2 tablespoons Thai red curry paste
1 can coconut milk
2 tablespoons fish sauce
2 tablespoons freshly squeezed lime juice
4 ounces rice noodles, cooked according to package instructions
Chopped fresh cilantro leaves for garnish
Directions
Boil a kettle of water . Place noodles in a large bowl and pour hot water over until they are covered. Separate strands with a fork and leave to soften, about 5 minutes. Drain and set aside.
