Ingredients
1 head of green cabbage, shredded
2 carrots, shredded
1 red onion, thinly sliced
1 jalapeno pepper, seeded and diced
3 cloves garlic, minced
1/4 cup white vinegar
1/4 cup olive oil
2 tablespoons lime juice
2 teaspoons sugar
1 teaspoon ground cumin
Salt and freshly ground black pepper to taste
Directions
In a large bowl, toss together cabbage, onion, carrot, and jalapeño, if using. In a small saucepan, combine vinegar, salt, and sugar a cook over medium heat, stirring, until salt and sugar are just dissolved. Pour brine over vegetables and toss to combine.
