Ingredients
2 tablespoons vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 pound skirt steak, cut into thin strips
Salt and freshly ground black pepper to taste
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
2 cups cooked pinto beans or canned beans, drained and rinsed
4 crusty rolls, split in half lengthwise
4 slices tomato
4 slices avocado or guacamole
Directions
Bring a large pot of salted water to a rolling boil. Add beans and cook until tender , about 4 minutes. Drain beans and run under cold water to halt cooking. Transfer to a medium bowl. Add peperoncini and their liquid and toss to combine. Set aside at room temperature.
