2 pounds pork skin
1 tablespoon kosher salt
2 teaspoons garlic powder
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon chili powder
Vegetable oil, for frying
Directions
Combine the baking soda with 1 teaspoon salt and rub all over the surface of the skin, taking care to distribute the mixture evenly. Set the pork belly on a rack and place it uncovered in the refrigerator for at least an hour but preferably overnight and for up to a day.
