Ingredients
2 boneless, skinless chicken breasts
4 ounces thin rice noodles
1/4 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon freshly grated ginger root
1 tablespoon sesame oil
2 cloves garlic, minced
Juice of 1 lime
Salt and pepper to taste
4 cups shredded cabbage or coleslaw mix
1 red bell pepper, julienned or chopped into small pieces
1/2 cup chopped fresh cilantro leaves
1/4 cup chopped peanuts
Directions
In a large bowl, combine the peanuts , cilantro, bell pepper, cabbage or coleslaw mix, salt and pepper. In a small bowl, whisk together the lime juice, garlic, sesame oil, ginger root, honey, soy sauce and peanut butter until smooth. Bring a pot of water to a boil over high heat. Add the rice noodles and cook for 4-5 minutes or until tender. Drain and rinse with cold water. Add the noodles to the large bowl with the vegetables and toss to combine. Add the chicken to the large bowl and pour in the dressing. Toss everything together until evenly coated in dressing. Serve immediately or chill before serving if desired. Enjoy!.
