1 9-inch unbaked pie crust

3/4 cup granulated sugar

2 tablespoons cornstarch

1/4 teaspoon salt

2 cups freshly squeezed orange juice

3 egg yolks, lightly beaten

2 tablespoons butter, melted and cooled slightly

1 teaspoon grated orange zest


3 egg whites, at room temperature

1/4 teaspoon cream of tartar

6 tablespoons granulated sugar


Preheat the oven to 425 degrees F. When the oven is ready, line the chilled pie shell with foil or parchment paper and fill with weights , and bake on the lowest rack of the oven for 15 minutes. Remove the weights and the liner, turn the pie, and bake until the bottom crust is a light golden brown, about 10 minutes more. Remove the pie shell from the oven and allow it to cool completely.
