Braised Lamb Ribs with Apricots and Onions Recipe

Ingredients
2 pounds lamb ribs
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
2 cups chicken broth or stock
1/2 cup dried apricots, chopped
Salt and freshly ground black pepper to taste
Chopped fresh parsley for garnish
Directions
Preheat oven to 350 degrees F . Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the coriander and cumin and cook for 1 minute more. Place the lamb ribs in a large baking dish and pour the onion mixture over them. Pour in the chicken broth or stock and sprinkle with salt and pepper to taste. Scatter the chopped apricots over top of everything. Cover tightly with aluminum foil and bake for 1 hour 15 minutes, or until the ribs are tender when pierced with a fork. Uncover during the last 15 minutes of cooking time to allow some of the liquid to evaporate if desired. Garnish with chopped fresh parsley, if desired, before serving. Enjoy!.
